- 3 cups chicken broth
- 1/4 cup peanut butter (I use the natural PB without sugar)
- 4 oz. red curry paste (1 jar, start with half of a jar if you’re worried about it being too spicy)
- 1/4 cup low sodium soy sauce
- 2 Tbsp. light brown sugar (or coconut sugar)
- 1 Tbsp. fish sauce
- 1 Tbsp. ginger (freshly grated)
- 1 tsp. salt
- 4 cloves garlic (minced)
- 1 lime (zest and juice of)
- 1 lb. boneless, skinless chicken breast (cut into bite size pieces)
- 1 sweet onion (or small yellow, diced small)
- 3/4 cup sliced carrots
- 1 cup sliced mushrooms
- 1 cup eggplant (heaping, chopped)
- 1 red bell pepper (sliced thick)
- 1 green bell pepper (sliced thick)
- 1 cup broccoli florets (heaping, cut big)
- lime wedges (optional)
- basil (torn, optional)
- red pepper flakes (optional)
- chopped peanuts (for garnish, optional)
