- 1 1/2 lb. boneless, skinless chicken thighs (or breasts, optional)
- grated cheddar (for serving)
- 1 cup sour cream
- 1/4 cup chopped cilantro
- 1 tsp. lime zest
- 2 tsp. lime juice
- 1/2 tsp. kosher salt
- 2 garlic cloves (minced)
