- 1 cup enchilada sauce (from above recipe )
- 1 medium zucchini (chopped )
- 1 cup quinoa (uncooked)
- 3/4 cup water
- 15 oz. black beans (drained and rinsed)
- 15 oz. corn (drained and rinsed )
- 4 oz. jalapeno chilies (diced)
- 1/4 cup fresh cilantro
- 4 corn tortillas (cut into strips )
- 1 cup shredded cheddar cheese
