This makes a lot of rice, but it is delicious & pork chops are tender. I’ve made this twice; once using minute white rice w/ pork chops (minute rice came out mushy, should have used regular rice). The 2nd time I made this, I used long grain white rice (much better). I did not have pork chops, so I decided to cook chicken in the oven and simply made the Puerto Rican rice in the Instant Pot. Next time I make this, I will sauté the onions & peppers before adding the tomato sauce and will probably make 1/2 the recipe because it makes a lot of rice for family of four, but so yummy!😋
