    SO good. We do generally cook a few extra slices of bacon so we have plenty to throw on top when we serve. When my kids ask "what's for dinner", and I say "potato bacon soup", there is instant excitement in the house. Can't recommend this dish enough. Like with almost everything cooked in an instant pot, use plenty of salt.
