- 2 tsp. minced garlic
- 2 Tbsp. tomato paste
- 1/2 cup red wine (medium to full-bodied, like Cabernet, Zinfandel, or Merlot)
- 2 cups low sodium beef broth
- 1 Tbsp. Worcestershire sauce
- 4 carrots (peeled and cut into large 2" to 3" chunks)
- 1 1/2 lb. baby potatoes (whole)
- 1 1/2 tsp. sea salt
- 1 1/2 tsp. crushed rosemary (dried)
- 1 1/2 tsp. dried thyme
- 1 tsp. fresh ground black pepper
- 1 tsp. granulated garlic (or garlic powder)
- 1 tsp. onion powder
- 1/2 tsp. paprika

I made this recipe with my new instant pot. It was super easy AND DELICIOUS!! I followed this recipe exactly and indeed at 35 min cook time (in addition to time getting to pressure and release time...55 min total) it was fall apart tender! The baby potatoes were perfect, but carrots (even though mine were large) were slightly too soft. I would suggest on the fat end, slice in half and don't slice the rest of the carrot (but cut into 3" pieces). Try to get really fat ones for this. The seasonings were perfect!! I will definitely make this again! The leftovers are great for French dip sandwiches...yum! I never did get my gravy to thicken, though...bummer. Just use brown gravy in a jar.

cooked mine with 2 lbs of angus beef chuck...i used 26 minutes instead of the 35 and everything turned out perfect. I did need to salt the gravy.

it turned out amazing! i had no wine so i used a little extra broth. i also used arrowroot instead of cornstarch. Salad and dinner rolls on the side. it was done in about 1 hr 45 min including pressuring and making gravy.

Excellent I have a small instapot 3quarts and had to scale down the recipe the first time I made it. However, I forgot to reduce the amount of wine and got it a little strong on the flavor (merlot) but it was still good, and I’m a complete cooking dork!
