This was only the third time I’ve used my new Instant Pot, and this recipe is definitely a keeper! I was about a lb. short with the pork but followed the directions as is. The sauce was so good that I’m glad I had a little extra.

Made some adjustments due to what I had available. I used a small jar of Pepperocini peppers (w/juice), oregano, lime juice, lemon juice, hot paprika, salt, pepper, Chile powder, garlic cloves, onion, dried cilantro, and a few tbsps of olive oil on a completely frozen Pork loin. I then pressured it in the instant pot for 50 minutes.
I realize this may be a very different recipe in the end, but this one was the base of my concoction. It was the absolute best pork I have ever eaten and the most tender I have ever had. Because it was frozen and only cut once in half, it held together perfectly and kept it’s shape. It stays moist and tender even with reheating and despite the lean cut of meat.

Quite a process. Certainly not a dump recipe, but it was amazingly delicious. Everybody loved it.

Really good and easy! I added an extra cup of chicken broth, left out jalapeño and added 1/2 tsp dried chipotle pepper. I left out the added salt and used coconut aminos instead, about 1T. Also added 1/2 bunch of cilantro. I substituted juice of orange with 1/2 of a lemon I had in fridge. I added 5 mins to the cook time since I have the larger pot.
Def need to boil the liquid down at the end to condense/thicken. We will make this again!

Fantastic! Everyone in my family LOVED it...will be making this a part of our regular rotation. For reference, this recipe served my family of 5 heartily with enough for one person to have for leftovers.
