- 1 lb. red beans (or kidney beans)
- 1 tsp. olive oil
- 1/2 pkg. andouille sausage (sliced, or 7 oz of sausage. Use more if you desire.)
- 1/2 cup chopped celery
- 1 cup chopped onion
- 1/2 cup green pepper (chopped)
- 2 garlic cloves (minced)
- 1 tsp. dried thyme
- 2 bay leaves
- 1 Tbsp. Creole seasoning (Tony Chachere, use less if you do not desire spicy)
- 1 tsp. red pepper (cayenne, omit if you do not desire spicy)
- 32 oz. chicken broth
- 1 tsp. chicken (Better Than Bouillon, Flavor)
- pepper
- salt
- ham
- pepper to taste Add salt at the end if necessary. There is salt flavor from the ham and sausage. You don't want to overdo it.
- 1/2 lb. ham hock (You can use any desired pork)
- 1 1/2 cups long-grain white rice (enriched, rinsed)
- 1 3/4 cups water
- 1 green onion (chopped, optional for garnish)

I had to cook the beans longer, 40mns vs 35. The spices used have them very good flavor.
