- 1 jalapeno (seeded and diced)

- 3 1/2 cups low sodium chicken broth (see recipe note below)
- 8 oz. tomato sauce
- 2 Tbsp. chili powder
- 1 Tbsp. yellow mustard
- 1 tsp. cumin
- 1 tsp. oregano
- 1 tsp. fresh ground black pepper
- 2 bay leaves
- 1/2 tsp. salt (or to taste)

I tried Mexican beans at a restaurant and loved them so much I wanted to make it myself. I tried another recipe and it was Ok. THIS ONE IS DELICIOUS! I used 2- 14.5 oz. cans of fire roasted tomatoes instead of tomatoe sauce. I also used 1 canned jalepeno pepper because I didn't have a fresh one. I will definitely make this again and again.
