- 3 tsp. kosher salt
- 1/2 tsp. pepper
- 1 Tbsp. cocoa powder (unsweetened, cuts acidity and adds a complexity. You won't notice it)
- 2 tsp. basil (dried)
- 2 1/2 Tbsp. Italian seasoning
- 1/2 tsp. red pepper flakes (or more for spicier)
- 2 tsp. oregano (dried)
- 2 Tbsp. parsley flakes (dried)
- 18 oz. tomato paste
- 2 tsp. sugar (optional, if needed)
- 1/2 tsp. baking soda (optional, if needed)

This came out amazing! I was sure the tomato skins were still going to be in there after I whizzed it. They were gone or chopped up so small you really had to look for them. I did use the Cocoa powder and I could not taste it. But it must've added something because the sauce was so delicious. Will definitely make again when I have a lot of tomatoes.
