  • 4 chicken breasts (large, trimmed and cut into lengthwise strips)
  • 2 lemons
  • 1 tablespoon greek seasoning (Check ingredients for Gluten-Free)
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup chicken stock
  • 1/2 teaspoon oregano ( Greek)
  • 1/2 teaspoon fresh ground black pepper
  • 3 cucumbers (medium, chopped)
  • 1 cup cherry tomatoes (chopped)
  • 1/4 cup kalamata olives (chopped, or black olives)
  • 1/4 cup red onion (finely chopped)
  • 4 ounces crumbled feta cheese (about 1/2 cup)
  • 1/4 cup Italian dressing (your choice, I like Newman’s Own Original Olive Oil and Vinegar Dressing, which has only 2 carbs in 1/4 cup.)
  • 8 tortillas (small low-carb, I used my favorite low-carb tortillas, fajita size.)
