- 2 lb. extra lean ground beef (preferably less than 10% fat)
- 3 tsp. olive oil
- 1 red bell pepper (large, stem and seeds removed and cut into short strips)
- 1 onion (large, cut into short strips)
- 1 Tbsp. minced garlic (minced garlic from a jar is fine)
- 2 Tbsp. sweet paprika (preferably Hungarian paprika, I used Szeged Sweet Paprika)
- 1/2 tsp. paprika (preferably Hungarian paprika, I used Szeged Hot Paprika)
- 1 pinch cayenne pepper
- 4 cups homemade beef stock (or use a little less than 3 cans beef broth – 14 oz. can)
- 2 cans petite diced tomatoes (14.5 oz. can)
- sour cream (for serving, optional)
