- 4 tsp. olive oil
- 1 onions (very large, chopped into 1/2 inch pieces)
- 1 Tbsp. crushed garlic
- 2 Tbsp. ancho chile pepper (ground)
- 2 tsp. sweet paprika
- 2 tsp. Mexican oregano
- 1 Tbsp. ground cumin (or less if you're not a big cumin fan)
- 1/2 cup homemade beef stock (or beef broth)

- 2 cans diced tomatoes
- juice
- 4 oz. diced green chilies
- salt
- ground black pepper
- 2 Tbsp. lime juice (fresh squeezed, optional, I used my fresh-frozen lime juice)
- Mexican cheese blend (grated, for serving, optional)
- reduced-fat sour cream (for serving, optional)
