    This was delicious! I had some potatoes left over from Easter and this was a good way to use them up. Today is a chilly, dreary day, which is perfect soup weather! I used uncured turkey bacon bits and shredded Velveeta. I omitted the green onions for preference. My daughter and I really enjoyed it.

    The 2 teenagers in my home said it was the best potato soup ever! They said to never try another because this was so good.
