- 2 cups okra (fresh or frozen chopped)
- 1 can diced tomatoes (salt free, 13 ounces- slightly drained)
- 2 Tbsp. apple cider vinegar
- 1/2 cup tomato sauce (salt free if possible)
- 1 cup cauliflower (riced or finely chopped, optional)
- kosher salt (to taste)

This was my first go with an instant pot, and the recipe was a smashing success! Just the right amount of kick in the spices, too. I substituted straight-up veggie broth for vegan protein broth.

Great flavor and hearty, not too much prep but more than I’d want for a last minute meal. Will be keeping this in the usual rotation at home!

Wow, really great. A little rice would make it more filling, but good by itself.
