- 1 tsp. minced garlic (or 2 cloves)
- 1 red bell pepper
- 1 1/2 cups chopped onion
- 2 celery ribs
- 1 Tbsp. fresh thyme (or 1 tsp dried per 1 tbsp fresh)
- 1/2 tsp. dried oregano
- 1/2 tsp. spice (Cajun mix, add more if desired)
- 1 tsp. cayenne
- 1 cup dried lentils
- 3 cups vegetable broth
- 2 cups okra (fresh or frozen chopped)
- 1 can diced tomatoes (salt free, 13 oz per can- slightly drained)
- 2 Tbsp. apple cider vinegar
- 1/2 cup salt (tomato sauce-, free if possible)
- kosher salt
- pepper
- jalapeño (optional)
- fresh cilantro (optional)
- 1 cup cauliflower (riced or finely chopped)
- 2 Tbsp. gluten free flour (or starch for stove top method)
