Very good! Used thick cut boneless pork chops. They were slightly over done at 7 minutes. I feel like I could either drop the cook time down a minute or either cut the natural release time back a bit. Not sure what would be the best choice, but all things considered, quite tasty.
Also, does anyone have tips for thickening up the sauce but still keeping it keto?

Fantastic!
Watch the size of your chops. If they’re too big , it’s hard to brown them in the pot. Once you get the steps down it’s fast & easy.
Always get so many compliments on it.

A lot more “cooking” time than I would have liked for a Insta Pot recipe but very good flavor

Tasted great and good leftovers. Feel free to add more protein; you’ll have leftover sauce.

think it would have more flavor if the thyme was switched out with italian seasoning. it was kind of bland
