- 16 oz. chicken andouille sausage (sliced into ½ inch thick rounds)
- 1 onion (large, diced)
- 3 rib celery (sliced)
- 1 bell pepper (red, or green, large dice)
- 1 jalapeno (finely chopped, or sub one small can green chilies)
- 6 cloves garlic (rough chopped)
- 14 oz. crushed tomatoes
- 4 cups chicken broth (or shellfish broth)
- 1 1/2 cups long-grain white rice
- 2 Tbsp. fresh thyme (or 1 teaspoon dry thyme)
- 1 tsp. oregano
- 2 bay leaves
- 1 tsp. kosher salt (more to taste)
- 1/2 tsp. smoked paprika
- 2 tsp. paprika (regular)
- 1/2 tsp. cayenne pepper (or chili flakes)
- 1 Tbsp. fish sauce (if using chicken broth, trust me)
- 16 oz. raw shrimp (large, peeled and de-veined, if frozen see notes)
- 1 cup frozen peas (or fresh, optional)
- 1 cup asparagus (optional)
- 2 cups veggies (roasted, optional)
- 1 can cooked chickpeas (optional)
- scallions (optional)

Just okay. Had some heat from the cayenne but didn’t have depth of flavor. Admittedly I did not have fish sauce or smoked paprika so those might have changed the flavor significantly.
