- 1 habanero (chopped Authentic Jerk uses scotch bonnet peppers. If you have access to these, feel free to use them. Habanero is a close substitute)
- 1 Tbsp. soy sauce (reduced-sodium)
- 1 lime (juice of)
- 1/3 cup pineapple juice
- 1/2 onion (chopped)
- 3 green onions (scallions, chopped)
- 1 tsp. cinnamon
- 1 tsp. ginger (fresh or jarred)
- 1/2 tsp. nutmeg
- 1 tsp. ground allspice
- 3 garlic cloves (chopped)
- 1 Tbsp. olive oil
- 2 tsp. Creole seasoning (I used Tony Chachere)

Loved this recipe! So much flavor. We recently moved and I had no idea where my blender was so I just chopped the onions and jalapeño and threw it in the bag with the chicken and the sauce. I also sautéed the chicken in a separate pan before putting it in the instant pot. The chicken was delicious but not spicy so I’ll likely add more jalapeños next time and include the seeds.

This recipe is delicious!!! Spicy and flavorful, and awesome comfort food. I made this with rice and carrots accompaniments. So good...my adult son enjoyed this too and has asked for it again! It's a keeper!!
