- 1/2 cup yellow onions (or diced white, red)
- 4 cloves garlic (finely minced or pressed through a garlic press, for about 2 teaspoons)
- 1/2 Tbsp. fresh ginger (grated, or ginger paste, see note)
- 2 lb. boneless, skinless chicken breasts (see note if using chicken thighs, cut into about 1-inch pieces)
- 2 cups russet (peeled, chopped, yellow or red potatoes, about 10 ounces)
- 2 tsp. ground coriander
- 2 tsp. Garam Masala
- 2 tsp. turmeric
- 1 tsp. salt (I use coarse, kosher salt)
- 1/2 tsp. paprika
- 2 cans tomato sauce (15-ounces each canned)
- 15 oz. reduced fat coconut milk
- 2 Tbsp. butter (optional, but delicious)
- cooked rice (for serving)
- chopped cilantro (Fresh, for garnish, optional)
