- 1 onion (diced)
- 2 Tbsp. olive oil
- 2 1/2 cups milk
- 1 can cream of chicken soup (could use cream of mushroom)
- 1 Tbsp. garlic salt
- 1/4 tsp. pepper
- 1 3/4 cups chicken broth (or beef broth if using cream of mushroom soup)
- 1 can corn (kernel, 14 oz., drained)
- 2 cups rice (white, uncooked, NOT minute rice)
- 2 cups cheese (Mexican blend is great)

turned out really yummy. I added black beans to the mix and some Italian seasoning. Definitely will repeat it!

It was very easy and fast to make, but the flavor was quite bland. The amount of sodium and calories for the meager serving size were way over the top! Although my husband enjoyed it, I won't be making it again.
