  • 1/2 cup oil-packed sun-dried tomatoes (with herbs, drained and dab excess oil off with paper towels, chopped)
  • 2 teaspoons Italian seasoning
  • 1 tablespoon minced garlic
  • salt
  • freshly ground black pepper
  • 1 pound boneless skinless chicken breasts (cut into 1-inch cubes)
  • 12 ounces pasta (uncooked campanelle)
  • 5 ounces baby spinach (fresh)
  • 8 ounces light cream cheese (cut into cubes and softened)
  • 1 cup shredded Parmesan cheese (finely, use fresh shredded)

    Love it! My family loved it! I accidentally left the noodles and chicken in the instant pot for too long before I hit cancel and release so noodles came out really soft but I will pay better attention next time! Tasted delicious regardless!

    amazing! its hard to have something thats a hit for the whole family and my mom was able to easily make a vegan version of this for her and my sibling and everyone else ate the recipe as is and its soooooooo good! about to try again with italian sausage

    It was delicious. I am always skeptical of putting raw chicken in the Instapot with the other ingredients, so I browned the chicken on the stove while the pasta cooked in the Instapot. It was a quick and delicious meal.
