- 1 cup chopped carrots

- 1 Tbsp. minced garlic
- 1 serrano pepper (minced)
- 1 Tbsp. fresh thyme (plus extra for garnish)
- 2 tsp. fresh sage (minced)
- 1/2 tsp. black pepper
- 1/2 tsp. crushed red pepper flakes
- 2 russet potatoes (medium, leave whole and unpeeled)
- 1 cup full fat coconut milk (or heavy cream/milk)
- parsley (garnish, optional)
