I just mixed all ingredients in a large bowl before dividing it between my two stacking IP inserts with about 1/3 to 1/2 cup water in the bottom one (bc it’s larger). Used one bag of Gardein crumbled burger cooked first in skillet. Other modifications: pressure cook 40 min., used one 14 oz. can diced fire roasted tomatoes w roasted garlic, added a can of black beans (in addition to kidney beans), used 2 tsp chili powder and a dash more cumin. Needs a little more cheese. I had to put the bottom stackable insert pot back in and pressure cook another 8 min. or so to soften the potatoes. Needs more seasoning when serving. May try some different toppings as well—salsa, hot sauce, guacamole, sour cream. Steamed vegetable side.
