- 1 1/2 cups Guinness Beer (or beef broth if you don’t want to use beer)
- 2 idaho potatoes (1 pound in weight, peeled and cubed into 1-inch cubes)
- 4 large carrots (peeled and cut into 1 ½-inch lengths)
- 1 head cabbage (cut into 6 wedges)

Pretty good. Hubby and son scarfed it up. I used a light beer as I did not have any dark ones around. Honestly not a beer drinker. I think it would have been better with beef stock if I had some.

Vegetables came out too soft. Time and size may need to be adjusted. The brisket turned out well
