- 1 1/2 lb. boneless chicken thighs (skinless and, cut into bite-sized pieces)
- 1 onion (diced)
- 1 cup chopped carrots
- 1 cup chopped celery
- 8 oz. portabello mushrooms (sliced)
- 2 Tbsp. minced garlic (I use 2 tablespoons but we are garlic lovers!)
- 1 serrano pepper (minced)
- 3 tsp. fresh thyme (plus extra for garnish, to taste)
- 2 tsp. fresh sage (minced)
- 2 tsp. salt (adjust to taste)
- 1/2 tsp. black pepper
- 1/4 tsp. crushed red pepper flakes
- 4 cups chicken broth (or bone broth)
- 1 cup wild rice (uncooked)
- 1 medium potato (leave whole)
- 1/2 cup full fat coconut milk (or you can use heavy cream/milk)
- 2 Tbsp. ghee (butter or sustainable palm shortening, optional)

This was delicious! Husband enjoyed it and asked for me to make it again. Next time I will get the wild rice from 1 cup to 2/3 as there was little broth left. The potato trick was a winner- will “steal” that for other preparations
