This was my first time to use an instant pot, and the results with this recipe were great. The chicken was very tender and shredded with the touch of a spoon. I had never tried to fix wild rice but had purchased some in Northern Minnesota, and it turned out perfectly. I substituted canned great northern beans since I did not have cannellini beans. I was afraid they would turn to mush, but they were also perfect. I would definitely prepare this again if I purchase more wild rice...which I just might have to do now.
