When all four of us love the same dish, I know I’ve found a permanent addition to the rotation. This is one of those. I also love being able to cook the potatoes and the chicken at the same time. And I don’t have a fancy tall trivet; I just make a barrier with foil over the potatoes, then a bowl-shaped piece of foil on that for the chicken. So good!

Finally bought an instant pot & tried this as a first meal. Huge hit with one of my kids. The other is in a phase of eating only 2-3 things lol
