My entire family gobbled this up! The only changes I made were as follows: I used olive oil instead of avocado oil, and basmati white rice instead of brown. When I make it again, I will wait to add the rice until I add the zucchini, which is after the cooking cycle (once the Instant Pot has been on “keep warm” for about 10 minutes). Delicious!
