- 1 tsp. salt (plus more to season the chicken)
- 1/2 tsp. pepper (plus more to season the chicken)
- 1 Tbsp. olive oil
- 1 onion (large, diced)
- 3 garlic cloves (minced)
- 3 large carrots (sliced)
- 2 celery stalks (chopped)
- 1/4 cup chopped parsley (fresh finely, plus more for garnish)
- 1 Tbsp. fresh thyme (minced, rounded)
- 1 bay leaf
- 7 cups chicken stock
- 6 oz. egg noodles (I used Mueller’s Hearty Homestyle Egg Noodles *see note)

Hubby said it was the best instant pot soup so far! I did squeeze half a le,on in, and added several handfuls of fresh greens at the end, stirring until just wilted.

easy and delicious! added a bit more seasoning, but overall a perfect meal!

Great soup, I made it with bone broth, 15 min is way too long for the pressure cook though... overcooks the chicken. I would say 10 minutes is sufficient based on other soups I’ve made. I also added mushrooms to the soup during the end simmer phase, really good.
