- 13 oz. andouille sausage (or smoked sausage, sliced into ½ inch pieces, see note)
- 2 cups mushrooms (sliced or quartered)
- 1 lb. cavatappi pasta (uncooked)
- 1 Tbsp. Cajun seasoning
- 14.5 oz. fire roasted tomatoes
- 8 oz. cream cheese (softened)
- 1 bell pepper (cored and thinly sliced, I used orange but green or red work too)
- 12 oz. cooked shrimp (frozen, –tail off, peeled and deveined, see note)
- 1 cup grated Parmesan cheese (or shredded)

This was really, really delicious! Different from most pasta dishes that I make. I did sauté the mushrooms with the onions before pressure cooking. I used a chicken andouille sausage. I accidentally bought raw frozen shrimp instead of cooked, so I ran them under cold water to defrost them while it was pressure cooking. I turned the pot on saute’, and threw in the shrimp and peppers. It only took about 4-5 minutes for them to cook, and then I mixed in the cream cheese. The shrimp came out nice and tender. My daughter is somewhat picky, but she really liked it. She just picked out the peppers and some of the sausage. The seasoning was perfect, not too spicy or too bland. I will enjoy the leftovers for lunch!
