- 3 lb. beef bones (preferably a mix of marrow bones, femur bones and bones with meat on them, oxtail, short ribs, and knuckle bones cut in half)
- 2 lb. chicken feet
- 3 Tbsp. olive oil (divided)
- 2 carrots (scrubbed and cut in half)
- 2 stalks celery (chopped)
- 1 large yellow onion (quartered with skin and root end in tact)
- 1 head garlic (halved crosswise)
- 2 whole cinnamon sticks
- 3 whole star anise
- 2 bay leaves
- 1 tsp. whole black peppercorns
- 1 tsp. kosher salt (plus more to taste)
- 1 Tbsp. apple cider vinegar
- 10 cups cold water (or enough water to come 1-inch below MAX fill line)
