- 2 lb. beef stew meat (trimmed and cut into 1 - 2 inch chunks)
- 2 tsp. sea salt
- 1/2 tsp. black pepper
- 1/2 tsp. onion powder
- 1/2 tsp. italian seasoning
- 1/3 cup flour (use gluten free flour or arrowroot starch if needed)
- cooking oil
- 1 onion (medium, cut into large chunks)
- 4 cloves garlic (minced)
- 6 Tbsp. tomato paste
- 2 Tbsp. balsamic vinegar (or red wine)
- 4 yukon gold potatoes (medium, peeled and chopped into 1 inch chunks)
- 1 sweet potato (large, peeled and chopped into 1 inch chunks, leave out if desired)
- 3 medium carrots (peeled and cut into slices)
- 2 celery (ribs, chopped)
- 2 tsp. worcestershire sauce
- 1 bay leaf
- 5 cups beef broth (homemade or low sodium)
- water (as needed to cover the vegetables)
- 2 Tbsp. chopped parsley (fresh, for garnish, optional)
- 1 star anise (optional but adds SO much depth and flavor)

- 2 Tbsp. cornstarch (or flour, all purpose, gluten free or arrowroot powder+ 3 tablespoons cool water)

It was good, very tender, but the seasoning needs to be adjusted for our taste. Will make again and adjust.

The recipe is too sweet for us. Will substitute the sweet potato with regular. Didn’t need the 6 cups broth after all. I used pressure cooker and the veggies turned to mush. Slow cooker next time so we keep the chunks.
