- 1 white onion (small, roughly chopped, 2 cups)

- 1/4 cup lime juice (freshly squeezed)
- 1 tsp. chipotle powder
- 1 Tbsp. dried oregano
- 1 Tbsp. ground cumin
- 1/4 tsp. ground cloves
- 2 tsp. sea salt (or to taste, see notes)
- 1/2 tsp. ground black pepper
- 3 lb. beef chuck roast (cut into 2″ cubes)
- 2 Tbsp. avocado oil
- 2 bay leaves
- 1 tsp. dried oregano (for the end of the cooking time)
- 6 cups frozen riced cauliflower (thawed)
- 2 avocados
- 1 batch guacamole
- 3 cups pico de gallo (or my Easy Fire Roasted Blender Salsa)
- 1/4 cup diced red onion
- 1 lime (cut into wedges)
