- 1 onion (diced or sliced)
- 1 red bell pepper (diced)
- 1 carrot (diced)
- 4 cloves garlic (rough chopped)
- 1 1/2 cups chicken stock (or broth, see notes, varies depening on rice you use)
- 1/4 cup white wine
- 2 tsp. dried oregano
- 2 tsp. smoked paprika (if you like.)
- 2 tsp. cumin
- 1 Tbsp. chili powder
- 2 tsp. salt
- 1 tsp. chili flakes (½ –)
- 1 can diced fire roasted tomatoes with juice (14.5 ounce)
- 1 cup white rice (rinsed, use regular white rice, or Calrose rice- or a short-grain white rice, or see notes for other varieties -IMPORTANT!)
- 1/4 cup sliced green olives
- 2 cups peas (1–, frozen are fine, or sub shelled edamame)
- fresh lime (squeeze of)
- lime wedges (optional)
- tortillas (warm, optional)
- queso fresco cheese (or sour cream, optional)
- avocado (optional)
- fresh Italian parsley (optional)
