My 3.5 year old daughter is so picky! Kraft mac and cheese and snacks are the only things she willingly eats. I made this chicken, shredded it and put it into tacos and she ate her whole large taco! The babysitter just told me that she was talking about how good her spicy taco was last night! I did add the cornstarch but it was still really watery. next time i will probably try adding more.

Amazing!! I used frozen chicken breast and cooked it exactly as the recipe suggested. I served on mission carb balance street taco tortillas with shredded Jicama, thin sliced fresh jalapeños, baby greens, cilantro, cheddar cheese, and of course lite sour cream to cool spice😉. SO GOOD, mom you’ll love it!

I made rice put it in a bowl, topped it off with chicken, pico de gallo, cheese and sour cream
By the way I skipped the brining based on previous review

I love the simplicity of this recipe, however it definitely needed some more spice to it. I used mild enchilada sauce but would definitely add taco seasoning or bump it up to medium sauce next time.

Used Rotel tomatoes and tomato paste instead of enchilada sauce, and added garlic powder. Very good over rice!

Delicious! I added frozen corn and black beans to the sauce when I put the shredded chicken back in...it added a little fiber and flavor!

This was pretty tasty! I also added a little garlic powder and dried minced onion. Had it on soft tortillas night one with cheese, salsa, and sour cream. Used leftovers for some chicken nachos: spread refried beans on chips, topped with chicken, sliced jalapeños and shredded Mexican cheese. Baked for 15 minutes at 350. Yummy! Will definitely make again for use in other recipes.
