- 1.5 kilograms beef (topside of, I believe the equivalent is the "round" cut in the US)
- 2 Tbsp. olive oil
- 2 Tbsp. balsamic vinegar
- 1 tsp. worcestershire sauce
- 2 sprigs rosemary
- 2 bay leaves
- 3 garlic cloves (crushed and peeled)
- 1 onion (medium, sliced into 1/2 inch pieces)
- 2 tsp. green peppercorns (they are softer than black peppercorns)
- 1/2 tsp. sea salt
- 1 beef stock cube (I love Kallo ones as the salt is low but the flavour very good)
- 1 tsp. mustard powder
- 2 tsp. cornflour (cornstarch in the US)
