Came out beautifully - I had to substitute ground sage for minced, and used 1 tsp. Smelled sagey but it works great with the squash.
I also wound up using about 1/4 cup "very dry sherry" and 1/4 cup dry vermouth, since it's winter and I only have red wine on hand since I'm not an animal.
Finally, I used a pinch of extra salt since - instant pot, not enough salt, etc.
Oh wait, FINALLY finally I let it slow-release for 7 minutes because I was busy with other stuff and didn't believe the squash would be fully cooked after 6 minutes at pressure.
Anyway. Yeah. YMMW but good, simple recipe.
PS. OH MY GOD I also didn't have a shallot so I used a yellow onion and just cooked it a little longer (about 4 minutes). Wow, I didn't make this recipe right AT ALL.
