  • 1 red pepper (julienned)
  • 1 courgette (small, shaved into ribbons with speed peeler)
  • 1 wedge cabbage (shredded finely)
  • 3 cherry tomatoes
  • 1 handful spinach
  • beans (handful of flat, cut into strips)
  • 1/2 broccoli (small, divided into florets)
  • 100 grams firm tofu (drained*)
  • 100 grams vermicelli rice noodles (optional)
  • 1 handful fresh coriander (optional)
  • red chilli (finely sliced, optional)
  • 2 wedges lime
  • 4 tablespoons tamari (for GF version or soy sauce)
  • 2 tablespoons rice vinegar
  • 2 teaspoons brown sugar
  • 1 teaspoon sesame oil
  • 1 garlic clove (minced)
  • 2 teaspoons ginger (grated)
  • 125 grams natural peanut butter (crunchy 100%)
  • 1/4 cup coconut milk
  • 1/4 cup water
  • 1 tablespoon tamari (for GF version or soy sauce)
  • 1/2 teaspoon ground turmeric
  • 1 1/4 teaspoons chilli (hot ground)
  • 1 garlic clove (minced)
  • 2 teaspoons ginger (grated)
  • 1 teaspoon maple syrup (or sugar)
  • 1 1/2 tablespoons tamarind purée (or lime juice)
