- 2 tsp. coriander seeds

- 1/2 tsp. whole cloves
- 1/4 tsp. cardamom seeds
- 10 thai chiles (or 3 Fresno chiles plus 2 or 3 red Thai chiles, stemmed and roughly chopped)
- 5 candlenuts (large, or macadamia nuts)
- 4 cloves garlic (peeled)
- 1 shallot (medium, peeled and quartered)
- 2 inches ginger ((5 cm) piece, peeled and sliced)
- 3 Tbsp. canola oil (I used semi-refined Lion and Globe)
- 6 lime leaves (kaffir, makrut)
- 2 sticks cinnamon
- 1 stalk lemongrass (fat, trimmed and knotted)
- 13.5 oz. coconut milk
- 3/4 tsp. salt
