- 2 Tbsp. tomato paste
- 1/4 cup dry white wine
- 8 cups chicken broth
- 3 large eggs
- 1 cup whole milk
- 1 cup all purpose flour
- 1/2 tsp. salt (for batter)
- 4 all-butter croissants (or 2.5 jumbo size croissants)
- coarse kosher salt (optional, for gravy)
- 1/4 cup melted bacon fat (or other fat, for greasing pan)

Made the gravy only to go with the Thanksgiving turkey. It was really good, easy, and the texture was absolutely perfect. I didn't have giblets, so used 2 turkey necks instead; would love to try this again with giblets, perhaps drippings, and/or homemade stock to get the most turkey flavor possible in there. (Note: I work for Yummly and was dying to try this recipe when I first saw it. Who would have thought? Croissants?! But it works...)
