I added tomatoes and spinach to mine plus a little cheese on top. I also only used egg whites even though some us yolk got in to the mix. I'm glad I put some spice in the actual egg (fresh basil and black pepper). The spinach didn't add any flavor but it's good for you and I didn't add feta cheese because I didn't have any. The diced cherry tomatoes really make the flavor!
