- 1/4 yellow onion (medium)

- salt (to taste)

- 3 cups vegetable stock (enough to cover the lentils in the pan, you might not use it all)
- 1/2 cup coconut milk
- 1/4 lemon (squeezed)
- 1 tsp. chive (chopped, for the topping)
- 1 tsp. chopped parsley (for the topping)
