- 1 bell pepper (large, cut in 1½ inch squares)
- 1 large red onion (cut in 1½ inch pieces)
- 2 cloves minced garlic (finely)
- 1 tsp. cumin
- 1 tsp. ground cardamom
- 2 tsp. ground ginger
- 2 Tbsp. garam masala
- 6 Tbsp. olive oil
- 1 1/2 tsp. salt
- 1 tsp. black pepper
- 1 lemon (juice of)
- 1 large red onion (diced)
- 6 cloves minced garlic
- 3 Tbsp. olive oil
- 1 apple (large, thinly sliced)
- 8 diced tomatoes (large very ripe, with the skins removed, or a 28-32 ounce can crushed tomatoes)
- 1 1/4 cups brown sugar
- 1/2 cup balsamic vinegar
- 1 tsp. ground thyme
- 1 tsp. chili paste (crushed, or ½ tsp cayenne pepper, more or less to taste of either if you want to better control the heat)
- 2 Tbsp. smoked paprika
- 2 Tbsp. chili powder
- 1/2 whole nutmeg (finely grated)
- 2 Tbsp. ginger (fresh finely grated)
- 1 tsp. kosher salt
- 1 tsp. freshly ground black pepper
- 3 cups yogurt (drained.)
- 6 inches English cucumber (piece of)
- 2 Tbsp. chopped fresh chives (finely)
- 2 cloves minced garlic
- 3 Tbsp. fresh lemon juice
- 2 Tbsp. olive oil
- 2 Tbsp. curry powder (yellow)
- 1/2 tsp. ground cumin
- 1 pinch salt (and pepper to season)
