- 1 tsp. chili powder
- 3/4 tsp. paprika
- 1 tsp. paprika
- 1 tsp. methi (kasoor)
- 1/2 tsp. kosher salt
- 3 Tbsp. oil
- 1/2 onion (coarsely chopped)
- 2 green chilies (seeded and diced, or thinly sliced if you want a bit of extra heat from the ribs)
- 1 Tbsp. cilantro stems (minced)
- 1 Tbsp. garlic (/ginger paste - recipe link below)
- 2 Tbsp. tomato paste (with enough water to dilute to the consistency of pasatta)
- 15 oz. base (curry, recipe link below)
- 12 oz. pre cooked chicken (or lamb)
- 1 Tbsp. sauce (tamarind, I use Maggi brand)
- 4 cherry tomatoes (cut in half)

I love this recipe! I found it hoping to recreate a favorite local resturant chicken curry, and was struggling to find something similar to their dish. This recipe was super close, and after a little practice I actually prefer this one to even my favorite local spots. I'll sometimes use more fresh tomatoes in lieu of the paste just to get more texture in the curry but it always turns out great! I haven't found one of your recipes that has let me down, but this is probably my favorite overall!
