- 2 white onions (medium, finely chopped)

- 2.5 cms fresh root ginger (/1in piece, grated)
- 2 tomatoes (finely chopped)
- 1 bunch fresh coriander (roughly chopped)
- 450 grams plain flour
- 100 grams strong white flour (/3½oz)
- 75 grams unsalted butter (/2½oz cold)
- 1/2 tsp. fine salt
- 100 grams vegetable fat (/3½oz solid, such as Cookeen or Trex, plus extra for greasing)
- 1 egg yolk (free-range, beaten, to glaze)
