Description

Rice breaded oysters with coastal South Indian flavors. If you don't have tamarind, you can use lemon juice instead.

  • 8 ounces oysters (extra small, preferably Yearling)
  • 1 clove garlic (minced)
  • 1/2 teaspoon turmeric
  • 1 teaspoon chili powder (or to taste)
  • 1/2 teaspoon tamarind paste
  • salt (to taste)
  • 1/4 cup rice (uncooked, or cream of wheat/cream of rice)
  • 2 tablespoons coconut oil

    Directions

    1. Combine the first 6 ingredients and let marinade for 15-20 minutes
    2. Meanwhile, in a food processor or blender, pulse the rice to a coarse texture. Alternatively, you could use cream of wheat or cream of rice.
    3. Bread the oysters in the ground rice.
    4. Heat oil in medium frying pan. When hot, fry oysters until browned on each side (3-4 minutes per side).
    5. Drain on paper towels and serve immediately.
