- 1 Tbsp. vegetable oil
- 1 red onion (medium, finely chopped)
- 2 cloves garlic (minced)
- 2 tsp. fresh ginger (grated)
- 1 tsp. mustard seeds (optional)
- 2 medium potatoes (peeled, chopped and steamed)
- 180 grams broad beans (frozen or fresh)
- 1 Tbsp. tomato puree
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/2 tsp. Garam Masala
- 1/2 tsp. turmeric
- 1/2 tsp. black pepper
- 1/2 tsp. methi leaves (optional)
- 1/2 fresh red chilli (finely chopped, less or more, to your taste)
- 1 tsp. sea salt
- 2 Tbsp. vegan margarine (I used Vitalite)
- 4 Tbsp. milk (non-dairy)
- 2 Tbsp. chopped coriander (fresh, plus a little to garnish)
