- 1 1/2 lb. sausage casings (sweet Italian turkey, removed)

- 6 oz. tomato paste
- 1/2 cup fresh basil leaves (chopped)
- crushed red pepper flakes (to taste, I use about half a teaspoon)
- 2 tsp. kosher salt
- 3/4 tsp. ground black pepper (freshly)
- 1/2 lb. lasagna noodles
- 15 oz. ricotta cheese
- 4 oz. goat cheese (creamy, crumbled)
- 1 cup grated Parmesan (plus 1/3 cup for sprinkling)
- 1 large egg (extra-, lightly beaten)
- 1 lb. fresh mozzarella (thinly sliced)
