- 1 Tbsp. butter
- 1 onion (large, finely chopped, about 1 1/2 cups)
- kosher salt
- 2 Tbsp. mayonnaise
- 1 Tbsp. ketchup
- 2 tsp. sweet pickle relish
- 1/2 tsp. sugar
- 1/2 tsp. distilled white vinegar
- 2 hamburger buns (soft, Kenji recommends Arnold, I used local bakery buns)
- freshly ground black pepper
- 8 chips (dill pickles)
- 2 tomato (quarter-inch-thick slices ripe)
- 2 leaves iceberg lettuce (fresh, white core section removed, torn to bun-sized pieces)
- 1/4 cup yellow mustard
- 4 slices American cheese (deli-cut, I bought this from my grocer's deli case)
